Sunday Waffles

The Perfect Starter
In the waffles vs. pancake debate, I am definitely team waffle and these toppings create the perfect indulgence for an already stunning Sunday Starter. Sundays give off a vibe as do all days of the week. If you were to create a Sunday vision board it would include the following: waffles, listening to Jack Johnson, morning walks, and sunshine. I know that Jack Johnson sings about Banana Pancakes, but believe me these blackberry and ricotta whip protein waffles do not disappoint. You can totally make blackberry waffles while you sing about banana pancakes...I mean why not! I like to call these my Sunday Waffles because I kept making them on Sunday mornings and it was such a relaxing way to begin the day! 

Sundays are the perfect day to start the journey of romanticizing your life. Romanticizing your life means to spending time on things that bring you joy and peace. This could be anything from taking extra time to make a special breakfast or taking time to go walk on the beach by yourself because that’s what brings you joy. I believe in romanticizing our everyday and these are the perfect catalyst to start creating that in your life!

Ingredients for Blackberry and Ricotta Whip Protein “Sunday” Waffles

Protein Waffles:

  • 1/3 cup of dry oats
  • 1/3 cup of Noosa Vanilla Yogurt
  • 3 tablespoons of egg whites
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon cinnamon

Ricotta Whip:

  • 1/3 cup of ricotta
  • 3 tablespoons of cream cheese
  • 2 tablespoons of honey
  • 1/2 teaspoon of cinnamon

Toppings:

  • Drizzle of honey
  • Pecans
  • Fresh blackberries

Directions

  1. Heat your waffle maker. You can make a single waffle with this recipe or about 3 smaller waffles.
  2. In a blender combine dry oats, egg whites, yogurt, baking powder, and cinnamon. Blend together until smooth.
  3. Once your waffle maker is heated, grease the waffle maker and pour in your mix. Let your waffles cook for 2-4 minutes until slightly golden brown. Remove the waffles and let them rest on a plate off to the side.
  4. In a bowl whisk together ricotta, cream cheese, honey, and cinnamon until all ingredients are combined.
  5. Plate your waffles and top with the ricotta whip then add fresh blackberries, pecans, and a drizzle of honey. Finally, enjoy your Sunday Waffles!
